Breakfast Bake

After a while, plain old oats for breakfast can get boring, so I decided to try making a clean eating breakfast bake. I like the idea of not having to get up in the morning and prepare breakfast; this way it is all ready for you to eat, just pop it into the microwave for 30 seconds and voila!

  • 2 cups rolled oats
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 2 tbsp baby apples
  • 2 bananas (1 mashed, 1 sliced)
  • 4 egg whites
  • 1.5 cups almond milk (or other milk of choice)
  • ½ cup raspberries
  • 2 tsp chia seeds
  • 1 tsp vanilla essence
  1. Preheat oven to 170c fan bake (375f).
  2. Combine oats, baking powder, salt, cinnamon and protein powder (if using) in a large bowl.
  3. In a medium sized bowl mash one banana. To the banana add the egg whites, baby apples, milk, ¼ cup raspberries, chia seeds and vanilla essence) and mix well.
  4. Grease a glass dish or baking pan (I used an 8×11) with cooking spray or coconut oil. Our the oat mixture into the dish and top with the sliced banana and the rest of the raspberries. Bake in the oven for 25-35 minutes or until cooked through.
