My husband is a big fan of fried rice, so this recipe has become a weekly staple in our house using the secret ‘rice’ ingredient – cauliflower! It tastes just like rice when added to this dish. You can add in a bunch of your favourite vegetables or try it with other meat – change the recipe to suit your tastes. I should also mention it is a hit with the kids!
1/2 raw cauliflower grated or processed in a blender
2 chicken breasts cut into cubes
1 cup frozen mixed vegetables
1/2 red cabbage, chopped
1/2 red onion, diced
1 tbsp crushed garlic
2 eggs or 4 egg whites
1 tbsp olive oil (or other oil of your choice)
2 tbsp soy sauce (optional)
1. Cook chicken in a large pan or wok over medium heat. When chicken is cooked, set aside.
2. In the pan add in the red onion and crushed garlic and saute until onion is soft. Add in the frozen vegetables and cook for 5 minutes. Add in the cauliflower and red cabbage, cover and cook for another 5 minutes.
3. Mix in the cooked chicken, eggs and soy sauce (if using). Stir until eggs have cooked. Serve and enjoy!
