Healthy Chocolate Brownie Pancakes

  • DRY
  • ½ cup oats
  • 2 tbsp cocoa powder
  • 2 tsp baking powder
  • 2 tbsp stevia
  • WET
  • 1 egg
  • ½ cup applesauce
  • 1 tsp vanilla
  • almond milk
  • ½ scoop vanilla casein or ¼ cup greek yoghurt
  • 1 tbsp peanut butter or powdered peanut butter
  • 1 tsp vanilla
  1. Combine dry ingredients together in a medium sized bowl, and wet mixture together in a small bowl.
  2. Add the wet mixture to the dry mixture and blend with a stick blender until combined. Add almond milk until the batter reaches desired consistency.
  3. Preheat a non stick fry pan over medium heat.
  4. Pour batter into the pan. When bubbles start to appear on the batter, flip and cook the other side for 30-60 seconds.
  5. For the frosting, if you are using casein, mix the casein with water or milk before adding the peanut butter and vanilla.
  6. If using greek yoghurt, combine with peanut butter and vanilla and mix well.
  7. Layer frosting between pancakes or dip pancakes into mixture.
