Healthy Honey Soy Chicken Stir Fry

 

Stir fry’s are always a part of our weekly meal plan because they are quick, healthy and taste great. I like to try out new recipes every now and again to mix it up. We had this stir fry last week and it is one of my favorites so far, and it is so easy I just had to share it with you!

Healthy Honey Soy Chicken Stir Fry

Ingredients
  • 300g soba noodles
  • 2 chicken breasts, cooked and shredded (or other meat/meat substitute of your choice)
  • 4 carrots, cut into matchsticks
  • 1 small head of broccoli, cut into small pieces
  • spinach leaves or lettuce cups to place stir fry on
  • Sauce
  • 2 tbsp honey
  • 2 tbsp of soy sauce or Bragg’s Liquid Aminos
  • 1 tsp sesame oil
Instructions
  1. Place broccoli and carrots into a non stick fry pan (oil optional) and stir fry until tender.
  2. Place soba noodles into a pot of boiling water and cook for 3 minutes, drain and set aside.
  3. In a small bowl combine honey, soy sauce and sesame oil. Combine chicken, broccoli, carrots and soba noodles in a large bowl. Drizzle over dressing and toss to coat.
  4. Divide the stir fry into bowls with spinach or into lettuce cups and serve immediately.
