My husband and I went out for a date night last week to a local restaurant called One22 where my brother-in-law works as a chef. Let me start off by saying I am not a huge salad person, I tend to find them quite bland and tasteless, but the warm smoked chicken salad I had at One22 is one of the best tasting salads I have ever had. I decided I would try and make my own healthy warm chicken salad that we can enjoy at home on a regular basis and this is what I came up with. Enjoy!
4oz cooked chicken (I used my crumbed paleo chicken recipe)
2 cups lettuce mix
2 tbsp pine nuts
2 tbsp feta cheese
2 tbsp diced spanish onion
1/4 cup diced sweet potato, cooked
1 tbsp aioli
2 tsp lime juice
1. Mix aioli and lime juice together in a small bowl.
2. Combine all ingredients together in a bowl (heat in fry pan if desired).
