Homemade Larabars

Larabars are raw natural bars that are great to eat as a healthy alternative to packaged processed bars. The only downside is that Larabars can get expensive, especially if you eat them often. Why not try making your own healthy Larabars at home?

There are two main ingredients that go into a Larabar:
1. Dates
2. Nuts

You can make as many flavours as you like, the varieties are endless. I usually make a big batch at once and eat them throughout the week. You will have to play around with the quantities and add warm water as needed in order for it to mould together. Let’s get on to the recipes!

Peanut Butter Choc Chip
4 cups pitted dates
2 cups almonds
4 tbsp of prepared PB2 or 2 tbsp natural peanut butter
1 cup organic chocolate chips

Blueberry Muffin
4 cups pitted dates
2 cups cashew nuts
1 cup dried blueberries
1-3 tbsp warm water
1/4 tsp vanilla essence

Chocolate Chip Cookie Dough
4 cups pitted dates
2 cups cashew nuts
1 cup chocolate chips
1/4 tsp vanilla essence
1/4 tsp sea salt
Warm water if needed

Chocolate Coconut
4 cups pitted dates
1 cup almonds
1 cup walnuts
1 tbsp unsweetened cocoa powder
1/2 cup shredded coconut
Warm water if needed

Orange Chocolate Chip
4 cups pitted dates
1 cup almonds
1/2 cup cashews
1/2 cup chocolate chips
1-2 tbsp pure orange juice
1/4 tsp vanilla
Warm water if needed

Method

  • Line a 9 x13 inch pan with baking paper along the bottom and up the sides.
  • Place the dates in some water in the microwave for a few seconds to soften them. Add the nuts to a blender and blend until they are finely chopped. Add the chocolate chips and blend until they are finely chopped.
  • Transfer the ground nuts and chocolate chips to a bowl and set aside.
  • Add the dates to the blender and blend until it clumps together. Add in the wet ingredients (nut butter, water or vanilla essence) and blend. Then add in the nuts and chocolate chips. You may need to add more warm water here. Note: If your blender isnt big enough for the whole recipe then blend it in halves.
  • Wet your hands and press the mixture firmly into the bottom of the pan. Place some more baking paper over the top of the bars and use the bottom of a cup and press down firmly on the mixture.
  • Refrigerate for at least 2 hours before cutting. Once it is set, transfer it onto a chopping board and cut into desired amount of pieces. Store in the fridge in a tightly covered container.
