I am forever trying to find new ways to flavour chicken, I find it just too bland by itself. A few weeks ago I decided to swap honey soy (which is a family favourite) for honey mustard and see how it would turn out. Needless to say it was a hit, so I thought I would share it.
- 1 tablespoon oil
- ½ cup honey
- 2 tablespoons wholegrain mustard
- 1 orange juiced
- 8 chicken thighs or drumsticks
- In a large bowl combine the oil, honey, mustard and ¼ cup orange juice (or 4-6 tbsp). Add chicken and stir to coat. Place in the refrigerator for 1-2 hours.
- Preheat oven to 220C (430F). Place chicken and marinade into a large glass dish and bake for 40-50 minutes or until cooked though, turning once. Once cooked, serve with your favourite sides.
