My husband is a huge fan of slow cooker recipes (not so much myself) so we usually try a new recipe every week or two. When I was younger and stayed at my Nana’s I always requested her honey soy chicken. No one makes honey soy chicken like Nana does; a mix of chicken wings and drumsticks served along side mashed potato, minted peas and sliced carrots; it was always a favorite among the grand kids. Although no one’s honey soy chicken recipe has ever come close to tasting as good as Nana’s, this one tastes delicious and is a hit with the kids so I knew I just had to share it with all of you!
Ingredients
6-8 chicken thighs
3 cloves of garlic or 3 teaspoons of crushed garlic
1 teaspoon basil (dried or fresh)
1/2 cup low sodium soy sauce (or naturally fermented soy sauce as a healthier alternative)
1/2 cup organic tomato paste (look for one with the least amount of ingredients and sugar added)
1/3 cup honey
Method
1. Place the chicken thighs into the slow cooker.
2. In a small bowl combine the other ingredients, then pour over top of the chicken thighs.
3. Cook on low for 5-6 hours (time will vary depending on the size of your slow cooker).
4. Serve with your choice of vegetables.
This is also a great option to use for freezer meals to cut down on cooking time during the week.
